Where have I been?
Right. So moving is hard. Packing up and selling previous home, leaving wonderful friends behind, moving to a new state, and living bare bones/temporarily while you find and purchase a new home- it has been a wild ride these 6-7 months. We are mostly settled. I still have a few rooms to tackle, and of course the garage is still a nightmare- BUT- I have a kitchen again! I have counter space! All of my kitchen gadgets and appliances are here! I finally feel as if I can take time to do the things I enjoy.
It has also been HOT HOT HOT. Unrelenting hot. I read an article this past week that reported: July 2016 was the hottest month on record, since record keeping began. I don’t know about you, but slaving over a hot stove or oven is not something I want to do when the heat index is above 100, and I’ve been out and about most of the day. This dessert requires zero cooking, zero baking. Once prepared, just freeze for a few hours and you have a refreshing desert that is gluten-free and delicious!
