Gluten Free Lasagna
This seriously is the easiest, and fastest gluten free lasagna recipe ever! The fact that it is so easy and fast, in no way compromises the taste. You could proudly serve this to friends without gluten free restrictions, and they would be none the wiser. You can also make this recipe ahead of time, freeze it, and always have something on had for those nights when you don’t feel like cooking, or you have unexpected dinner guests. I always try to have a tray in the freezer ready to go!
I can’t even remember where I picked up the original non gluten free recipe. It is a photocopy from a newspaper that dates back almost 20 years. I believe I was newly married, and my Nana who was afraid my poor husband would starve, sent this to me. I’ve been making the original version for over two decades, and knew once I went gluten free, that I had to convert this for my new restrictions.
Obviously, the biggest change is the noodles. Gluten free lasagna noodles aren’t too difficult to find. I used Great Value Cafe No Boil Rice Lasagna. Any gluten free lasagna noodles will work. Barilla and Heartland also have their own gluten free version of lasagna noodles. They do not have to be no boil noodles. That’s the beauty of this recipe. You do not have to boil the noodles! Everything else is really simple. The most difficult part of this recipe is the construction- the layers. Even then, it doesn’t have to be pretty. It all gets cooked together and melds into a delicious meal!
I’ll include instructions on the recipe itself, for the make ahead and freeze version. You will definitely want to make two trays at once, and save one for later. This meal is best served with a salad.
