I’ve been thinking a lot lately about comfort food. We’ve recently moved to a new state, sold our old home, and are waiting to close on our new home. This means that I’ve been working in a very limited kitchen, without any of my tools, and cramped, non-existent counter space. I’ve done my best to make this temporary living arrangement feel as much like a home as possible. That includes feeding my family their favorite comfort foods. It has been a challenge. Four plates, four bowls, four cups and mugs, four forks, one baking dish, no stand mixer, no hand mixer, no food processor… you get the idea. I go to create a meal, and then realize the item I need is boxed and packed away in storage. Frustrating. I may or not be eating my feelings as of late. Cheesy Chicken Strips Gluten Free- A fast and delicious meal that the whole family will enjoy, even if they don’t have gluten free restrictions!
The gluten-ed up version of this meal was a staple in my household. Everyone loved it. It could be customized with your own dipping sauces, and it was finger food! It was a fun meal.
