I’m not a fan of meatloaf. Never have been. Most likely, this dates back to childhood. Hockey-pucked, dried-out, beef. Yum. Unfortunately, my husband was a fan. I suppose I had to make it for him.
I found a recipe at food.com that appeared to be the best compromise. Turkey meatloaf, that was moist, lower-fat, and was also delicious! My new goal, was to make a turkey meatloaf- gluten free, that fit the same taste and texture criteria of the original recipe. It was a wonderful success, even for those who didn’t need to eat gluten free!
